Chicken Tinga

Add all ingredients to an instapot or slow cooker and cook on low for 6hrs.

When done, taste for salt levels and add if need be.

Fill tacos, sandwiches, use on pizza or add to a tortilla soup.

Keeps well in the fridge in an airtight container for up to a week.

Freezes well! I like to make a big batch, eat once and then freeze the leftovers in mason jars.

INGREDIENTS:

3 lbs of bones chicken tights

3 dates, pits removed and chopped

1/2 can of chipotle peppers in adobo sauce
